The HP range of blast freezers is designed to guarantee ice cream of the highest quality, with all the freshness and creaminess that make it a unique, special food item. After creaming, the free water present in the ice cream is transformed into macro ice crystals, which can cause the ice cream to lose its creaminess, flavour and volume. Use of the blast chiller allows for the formation of extremely small micro crystals, thus preventing alteration of the ice cream’s properties
